Tea types: White tea

White tea is very slightly fermented tea. The fermentation level is 5~15%. Loose leaves covered with fine hair is typical for white tea.

White tea is only made from the tip of the tea leaf. Newly grown shoots of the trees give it the delicate and elegant aroma and taste. To maintain the shape and silver hair, white tea is only dried with natural sunlight or gentle warm air. The process usually takes hours, which is a true test of the tea maker’s patience and skills.

Chinese Baimudan (white peony), Baihao Yinzhen (white hair silver needle), shoumei, gongmei (mei cha) are types of often seen white tea in the market.
